2024 "SWALLOW THE SUN" VIOGNIER ON SKINS

Viognier from certified organic Loosen Family Vineyard in De Luz. This vineyard at the south slope of the Santa Rosa plateau, with rich volcanic soil. Harvested early at 19 Brix to retain acidity. 25% whole cluster and 75% de-stemmed. This wine was fermented on the skins for 8 days. After fermentation, the wine was basket pressed into two neutral French oak barrels. Lees were stirred weekly for two months, with an additional 4 months of resting in barrel prior to being bottled.

As with all of our wines, this wine was produced with organically farmed fruit, and bottled unfined and unfiltered.
